Kallari Chocolate has joined my chocolate snacking ranks. I am very picky about my chocolate. It’s something of a running gag at Crave Local HQ, and scarier when you see the 5-10 pound bags of Valrhona and Askinosie chocolate in my kitchen. So I was really excited to test out Kallari, as I’m always out to try single origin bars. In 2003, and with the support of a volunteer and soon-to-be brand ambassador, James Bassett-Can from the United States, brought his vision to life with the help of advice from Swiss and German chocolate manufacturers when Kallari chocolates produced their first 70%–85% dark chocolate bars and delivered them to the international market with very positive reviews. Kallari’s story is a rare one in the history of chocolate, a history that has been dominated by conquerors and industrialized countries. I was curious about how Kallari’s bar would stand up to the other organic, Fair Trade or Rainforest Alliance bars on the Whole Foods shelves.
